VEGAN Chocolate Chip PB BANANA BREAD

This Vegan Chocolate Chip PB Banana Bread is one of my favorite healthy treats to whip up. Made with 7-8 simple ingredients (including PEANUT BUTTER) & ready in just 45-50 minutes. This banana bread is Dairy Free, GF, & Refined Sugar Free. Plus so freaking good!!! I promise this will not last long in your home.

Healthy ingredients you need to make this bomb Vegan Chocolate Chip PB Banana Bread:

Bananas
Coconut Oil
Flaxseed Meal
Coconut Flour
Baking Soda
cinnamon

*How to make a FLAX EGG for this Vegan Chocolate Chip PB Banana Bread (to keep VEGAN):

Instead of eggs, I used the flax meal substitute. To make your very own flax egg simply mix:

1 tbsp flax meal + 3 tbsp water = 1 flax egg

Let this sit for at LEAST 5 min to thicken prior to mixing in & voilà! You have your vegan egg substitute. These use to intimidate me in baking, but they are incredibly simple to make and only require 5 minutes of your patience.

DIRECTIONS:

  1. Preheat oven to 350.
  2. Make vegan flax eggs & let sit until thickened (~5 min).
  3. Mash two spotty bananas until creamy.
  4. Mix in peanut butter, melted coconut oil, & flax eggs (or 2 normal eggs if not vegan).
  5. Pour in dry mix (coconut flour, baking soda, & cinnamon).
  6. Stir until fully mixed.
  7. Fold in chocolate chips.
  8. Pour into 8×5 parchment paper lined loaf pan.
  9. Bake for ~45-50 min.
  10. Cool, slice, & ENJOY
