This Vegan Chocolate Chip PB Banana Bread is one of my favorite healthy treats to whip up. Made with 7-8 simple ingredients (including PEANUT BUTTER) & ready in just 45-50 minutes. This banana bread is Dairy Free, GF, & Refined Sugar Free. Plus so freaking good!!! I promise this will not last long in your home.
Healthy ingredients you need to make this bomb Vegan Chocolate Chip PB Banana Bread:
- 2 spotty bananas
- 1/3 cup creamy PB
- 1/3 cup coconut oil
- 2 vegan flax eggs*
- 1/3 cup coconut flour
- 1 tsp baking soda
- 1 tsp cinnamon (optional)
- 1/3 cup dark chocolate chips
*How to make a FLAX EGG for this Vegan Chocolate Chip PB Banana Bread (to keep VEGAN):
Instead of eggs, I used the flax meal substitute. To make your very own flax egg simply mix:
1 tbsp flax meal + 3 tbsp water = 1 flax egg
Let this sit for at LEAST 5 min to thicken prior to mixing in & voilà! You have your vegan egg substitute. These use to intimidate me in baking, but they are incredibly simple to make and only require 5 minutes of your patience.
**1:1 substitute for eggs in any recipe**
TIK TOK (step by step):
- Preheat oven to 350.
- Make vegan flax eggs & let sit until thickened (~5 min).
- Mash two spotty bananas until creamy.
- Mix in peanut butter, melted coconut oil, & flax eggs (or 2 normal eggs if not vegan).
- Pour in dry mix (coconut flour, baking soda, & cinnamon).
- Stir until fully mixed.
- Fold in chocolate chips.
- Pour into 8×5 parchment paper lined loaf pan.
- Bake for ~45-50 min.
- Cool, slice, & ENJOY
