These no-bake Pumpkin Pie Fudge Bars are so easy to whip up and taste amazing! Made with just SEVEN simple ingredients, gluten-free, and dairy-free. These are the perfect healthy treat to satisfy your sweet tooth or to take as a quick snack on the go!

Ingredients you need to make these healthy Pumpkin Pie Fudge Bars
Purely Elizabeth Granola (GF) – This Pumpkin Cinnamon Ancient Grain Granola is gluten free, naturally sweetened, and made with all natural ingredients! You can substitute another flavor if you do not have pumpkin on hand, however you will lose some fall flavor in your final bar.
Coconut Oil – Made by pressing fresh or dried coconut meat. It is an antioxidant loaded, healthier cooking oil that is anti-inflammatory and full of MCT’s which may support fat burning.
Cashew Butter – Make sure to go only with one ingredient brands to keep out the junky ingredients like extra sugar/oils. Check out the link for one of my favorite brands!
Pumpkin Puree – This is simply cooked & mashed pumpkin in a can. Always look for organic, and one ingredient cans.
Coconut Flour – This is an amazing gluten free flour substitute made from coconut flesh, dried, and ground into a flour like consistency.

Pumpkin Pie Bars (Vegan and Gluten Free)
- Total Time: 40 minute
- Yield: 16 Bars 1x

Ingredients
Granola Base
- 3 cups purely elizabeth granola (pumpkin flavor preferred but original will also taste great)!
- 1/3 cup melted coconut oil
- 1/3 cup creamy cashew butter
Pumpkin Pie Fudge Layer
- 1 cup creamy cashew butter
- 1/2 cup canned organic pumpkin puree
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 tbsp pumpkin pie spice
- 1/4 cup coconut flour
Instructions
- Add your granola, melted coconut oil, and cashew butter to a high speed blender (I used my Vitamix) or a food processor.
- Blend until the granola layer mix has a liquid consistency. (If it is not liquid enough after blending for a couple of minutes you can try adding a touch more melted coconut oil).
- Pour the granola layer blended mix into an 8×8 parchment paper lined pan. (Do not forget the parchment paper on the bottom as this will help pop them out once complete).
- Place the pan into the freezer on a flat surface inside.
- Add your pumpkin pie layer ingredients into a large mixing bowl.
- Mix thoroughly.
- Once the granola layer is hardened from the freezer, pour the pumpkin layer on top and spread evenly.
- Place the pan back into the freezer to harden.
- Once hardened slice into squares with a sharp cutting knife and ENJOY!
