BRING ON THE PUMPKIN RECIPES. This time of year I am HERE for all things pumpkin and this PALEO PUMPKIN BREAD was perfectly dare I say ‘moist’ and loaded with flavor!

Ingredients You Need: ⁣

Optional Add-Ins:

  • Dark chocolate chips
  • Pumpkin seeds

How to Make Paleo Pumpkin Bread:

  1. Mix wet ingredients first: pumpkin puree, maple syrup, coconut oil, vanilla extract, eggs, and creamy almond butter.
  2. Mix dry ingredients separately: pumpkin spice, coconut flour, almond flour, vanilla collagen, and baking soda.
  3. Pour dry ingredients into wet.
  4. Mix thoroughly
  5. Pour mix into parchment paper lined loaf pan and sprinkle dark chocolate chips on top (optional).

How to Make Your Pumpkin Bread VEGAN:

For a vegan pumpkin bread, swap the eggs for vegan flax eggs and use a plant-based vanilla protein powder instead of collagen.

Description

This Paleo Pumpkin Bread is dairy-free, gluten free, and refined sugar free. I even snuck some vanilla collagen for all of the amazing skin, hair, and gut benefits! You can have a slice of this healthy pumpkin bread for breakfast, as a quick snack on the go, or as a healthy treat.

Instructions

  1. Mix wet ingredients first: pumpkin puree, maple syrup, coconut oil, vanilla extract, eggs, and creamy almond butter. 
  2. Mix dry ingredients separately: pumpkin spice, coconut flour, almond flour, vanilla collagen, and baking soda
  3. Pour dry ingredients into wet. 
  4. Mix thoroughly
  5. Pour mix into parchment paper lined loaf pan and sprinkle dark chocolate chips on top (optional).
  6. Bake at 350 for 45-50 minutes until cooked through.

Store in airtight container for up to 2 weeks (if you can make it that long!)
