PALEO CHOCOLATE BANANA BREAD (Vegan, Nut-Free)

Trying to make the most of quarantine by baking up all the goods. This Paleo Chocolate Banana Bread might be one of my new favorite healthy treats to whip up. I’ve absolutely loved some of my other healthy banana loafs such as this chocolate chip tahini banana bread or chocolate walnut banana bread, but wanted to test out a banana bread with a more chocolatey, fudgy base. This turned into the most bomb CHOCOLATE BANANA Bread loaf – Paleo, GF, Refined Sugar Free!

Paleo Chocolate Banana Bread

Here’s what you need:

Vegan Flax Egg

**To make this loaf vegan I use flax eggs. You can substitute eggs with a 1:1 ratio. To make 2 vegan flax eggs mix: 2 tbsp flax meal + 6 tbsp water. Let sit for ~5 minutes to thicken.

Wet Ingredients:

2-3 Spotty Bananas
Flaxseed Meal – For VEGAN Flax Egg

Dry Ingredients:

Cacao Powder

Directions:

Mix wet ingredients first:

  • Mash 2-3 spotty bananas until liquidy and fully mixed.

Mix Dry Ingredients Separately:

In a separate mixing bowl mix the dry ingredients together in full.

Pour dry ingredients into large mixing bowl with wet ingredients and mix all together. If the consistency is too dry and you only used 2 bananas, add 1 more.

Pour mix into loaf pan:

Line the loaf pan with parchment paper and spread evenly with a spatula.

Sprinkle top with dark chocolate chips (optional). Bake at 350 for ~45-50 minutes. Cool, slice, & enjoy!

  1. Mash 2-3 Spotty Bananas
  2. Mix in melted coconut oil (1/3 cup) and dash of vanilla extract.
  3. Add vegan flax egg once 5 min thickening window is up.
  4. In a separate mixing bowl mix the dry ingredients together in full.
  5. Pour dry ingredients into large mixing bowl with wet ingredients and mix all together. *NOTE: If the consistency is too dry and you only used 2 bananas, add 1 more.
  6. Line the loaf pan with parchment paper and spread evenly with a silicone spatula.
  7. Sprinkle top with dark chocolate chips (optional).
  8. Bake at 350 for ~45-50 minutes until fully cooked through.
  9. Cool, slice, & enjoy!
