No-Bake Healthy Cookie Dough Bars |Vegan, Gluten-free

These healthy no-bake COOKIE DOUGH BARS are so easy to whip up and taste amazing! These bars are made with just 6 simple ingredients and are vegan, grain-free, gluten-free, and dairy-free. These bars are the perfect healthy treat to satisfy your sweet tooth or to take as a quick snack on the go!

Ingredients you Need:

Base Layer:

  • 1 cup chocolate chips – look for a high cacao percentage and minimal ingredients when purchasing your chips
  • 1/4 cup coconut oil this helps melt your chips and adds a touch of natural sweetness to the base

Cookie Dough Layer:

  • 1 cup cashew butterthis gives the cookie dough layer a nice creaminess and a touch of saltiness for that sweet and salty effect
  • 2 tbsp coconut floura great gluten free alternative to baking and when you can opt for organic!
  • 2 tbsp maple syrupa natural sweetener to add a healthy sweet taste to the bars
  • dash of vanilla extractvanilla is one of my favorite ingredients to add a nice tough of sweetness to recipes. just a dash is all you need!

Healthy Cookie Dough Bar Directions:

Chocolate Layer:

  1. Melt 1 cup dark chocolate chips with 1/4 cup coconut oil in microwave.
  2. Stir until fully melted
  3. Pour chocolate mix into parchment paper lined loaf pan and spread evenly
  4. Pop in freezer until hardened.

Cookie Dough Layer:

  1. Mix 1 cup cashew butter + 2 tbsp coconut flour + 2 tbsp maple syrup + dash of vanilla.
  2. Stir until creamy and fold in chocolate chips.
  3. Spread evenly on chocolate layer (once hardened) & freeze again until hardened.

Use a sharp knife to cut into squares and enjoy!

Notes

I have not tested but you can try subbing your nut butter for another creamy nut butter of your choice!
