I am all about the quick and easy meals, and this healthy chicken sausage gnocchi skillet did not disappoint. Made with Al Fresco’s Sun-Dried Tomato Chicken Sausage and the Sweet Potato and Cauliflower Gnocchis from Trader Joes. I definitely have two moods – one where I am ready to spend an hour in the kitchen whipping up the most elaborate meal possible. The other where I am HANGRY and need my food ASAP with no time to waste. This one skillet dinner definitely falls into the latter category of hangriness. The best thing about this healthy dinner is you get the speedy meal that tastes delicious too!

Healthy Ingredients You Need:

- 1 Package Al Fresco Sundried Tomato Chicken Sausage
- Cauliflower Gnocchi (1 Bag)
- Sweet Potato Gnocchi (1 Bag)
- Bag of Spinach
- Mushrooms
- Tomato Basil Pasta Sauce
- Avocado Oil
- Sun-Dried Tomatoes
- Hemp Seeds
- Pepper Flakes
Baking Tools:
- Le Creuset Cast Iron Skillet – Le Creuset is my favorite skillet I own + dishwasher safe. They have a variety of color options which adds a nice touch to your dish!

How to Make this Chicken Sausage Gnocchi Skillet:
1) Drizzle avocado oil on skillet and bring to medium heat. Add gnocchis and sausage to skillet. Sauté on skillet until tender.

2) Stir in spinach into skillet.

3) Mix in tomato basil sauce and heat for another 1-2 minutes.

4) Sprinkle with Sun-Dried tomatoes and top off with hemp seeds & pepper flakes.
5) Dig in!

Chicken Sausage & Gnocchi Skillet
- Total Time: 10 minutes

Ingredients
- 1 Package Al Fresco Sundried Tomato Chicken Sausage
- 1 Bag Cauliflower Gnocchi
- 1 Bag Sweet Potato Gnocchi
- Bag of Spinach
- Mushrooms
- Tomato Basil Pasta Sauce
- Avocado Oil
- Sun-Dried Tomatoes
- Hemp Seeds
- Pepper Flakes
Instructions
- Drizzle avocado oil to cast iron skillet and turn on medium heat.
- Add 1 bag of cauliflower gnocchi, 1 bag of sweet potato gnocchi, and 3-4 chopped of chicken sausage. Sauté until tender.
- Once tender mix in spinach into skillet for another 1-2 minutes.
- Stir in tomato basil sauce for another minute until warm.
- Move skillet aside, and mix in handful of sun-dried tomatoes.
- Season with hemp seeds & pepper flakes.
