Healthy Banana Bread Bars w/ Chocolate Chips {Dairy-Free}

These healthy banana bread bars with chocolate chips are dairy free, gluten free, & refined sugar free! Made with creamy peanut butter & almond flour along with the spottiest bananas you can find in your kitchen. 🙃

Healthy Banana Bread Bars with Chocolate Chips (Dairy Free, GF)

One thing you should know by now is DO NOT TOSS YOUR SPOTTY BANANAS. salvage them instead into these deliciously dare I say moist, delectable healthy banana bread bars melted chocolate chips and creamy PB. i mean how can you go wrong with already 3 of my favorite ingredients?? spotty bananas really bring out the flavor when baking so trust me on this to not let those precious baking ingredients go to waste.

What makes these Banana Bread Bars healthy?

This recipe uses real food ingredients that are one ingredient foods and gluten/grain free! Some ingredients this recipe uses are as follows:

  • Spotty Bananas – The spottier the better as this gives your bread more flavor!
  • Coconut Milk – You can find cans at most grocery stores and I always stock up at these on the store. Make sure to buy cans with no added sugar or gums!
  • Pasture Raised Eggs – Try to go pasture raised when you can for the highest quality eggs
  • Vanilla Extract – I recommend going organic with no added ingredients. Simply organic is one of my favorite brands.
  • Coconut Flour –  This is an amazing gluten free flour substitute made from coconut flesh, dried, and ground
  • Baking Soda – Helps the bread rise while baking
  • Creamy Peanut ButterMake sure to go only with one ingredient brands to keep out the junky ingredients like extra sugar/oils. Check out the link for one of my favorite brands!
  • Coconut SugarThis is a natural sweetener made from dehydrated sap of coconut palms. This sweetener retains nutrients (including iron, zinc, calcium and potassium) unlike highly processed sweeteners such as high fructose corn syrup. It is best to still consume in moderation but this is a great healthier alternative to add some sweetness to your baked goods.
  • Almond Flour
  • Cinnamon

Healthy Banana Bread Bars w/ Chocolate Chips {Dairy-Free}

Instructions

  1. Mash your spotty bananas in largest mixing bowl until fully mashed and have a creamier consistency. 
  2. Mix in the remainder of your wet ingredients: 1/4 cup coconut milk, 1/2 cup peanut butter, 2 pasture raised eggs, & a dash of vanilla extract
  3. In a separate mixing bowl, fully mix your dry ingredients: 1 tbsp coconut sugar, 1 cup almond flour, 2 tbsp coconut flour, 1 tsp baking soda, & 1 tsp organic cinnamon
  4. Pour your dry ingredients into the wet ingredients. 
  5. Mix all together until fully blended and creamy. 
  6. Fold in 2/3 cups dark chocolate chips
  7. Pour your healthy banana bread bars mix into a parchment lined paper small casserole dish
  8. Sprinkle some extra chocolate chips on top. 
  9. Bake at 350 for 30-35 minutes (if you prefer your bars gooier, go with the lower amount of time and on the flip side if you prefer them fully baked and slightly more crisp then keep them in slightly longer). 
  10. Cool and slice into bite sized bars for healthy snacking** 
  11. ENJOY!

*store in an airtight container 

**pro tip is to bring hold a very sharp cutting knife under hot water for a few seconds and then use the knife to cut into the bars. will give you much cleaner lines!
