Banana Bread Oatmeal Skillet

  • Total Time: 30 minutes




  1. Make vegan flax egg by mixing 2 tbsp flax meal + 6 tbsp water (allow to sit at least 5 min before mixing)
  2. Use immersion blender, mix wet ingredients until fully blended.
  3. Mix in vegan flax egg after ~5 minutes have passed
  4. Mix dry ingredients in separate bowl.
  5. Pour dry into wet and mix thoroughly
  6. Pour mix into coconut oil lined cast iron skillet
  7. Top off with banana coins & sprinkled dark chocolate chips
  8. Bake at 350 for ~25 minutes until golden
